Green Coffee Bean Extract: More than Just for Weightloss

Brought into the spotlight by physician and TV show host Dr. Oz, green coffee bean extract is hailed as one of the better and safer weight-loss supplements on the market today. But, research has shown it to be useful in other areas of health too, as discussed in’s article below:

Raw versus Roasted
Green coffee beans are the unroasted seeds of Coffea fruits (1). If dried, roasted and brewed, they become a regular cup of coffee, which itself has been shown in studies to do the body good due to its high levels of antioxidants. However, drinking a cup of coffee will not provide the same weight-loss benefits that green coffee bean extract will; it doesn’t contain enough of its active component, chlorogenic acid.

Chlorogenic acid is a phytochemical found in most fruits  and, in higher concentrations, coffee beans (2)! Unfortunately, chlorogenic acid levels in coffee beans decrease during roasting. In one study, researchers found that roasting green coffee beans at 230°C for 12 minutes slashed its chlorogenic acid levels in half; roasting them for 21 minutes at 250°C reduced chlorogenic acid content to “almost trace levels”(3). So, to reap the full benefits of green coffee bean, consume it unroasted, preferably in extract form.

Chlorogenic acids inhibit amylase and glucosidase, the carbohydrate-digesting enzymes. This decreases sugar absorption, minimizes blood-sugar spikes and  may lead to improved insulin sensitivity and, ultimately, fat loss over time (4).

Weight-Loss Studies
Multiple studies have tested the efficacy of green coffee bean for weight loss. In a recent 22-week crossover study, 16 overweight adults were divided into three groups. Each group took either 1,050 mg or 700 mg of green coffee extract or placebo for six weeks. After a two-week washout period, they then switched dosages. The process was then repeated, so by the end of the 22-week period, each group had taken the high dose, low dose and placebo for six weeks. Despite no significant changes in diet, individuals lost an average of 17.6 pounds and 4.44% of their body fat. Most importantly, these decreases occurred while taking the green coffee extract, not the placebo (5).

Other researchers compared glucose absorption in 12 healthy adults who either drank normal, decaffeinated or chlorogenic acid-enriched coffee. They found a 6.9% reduction in glucose in those that drank the enriched coffee versus no effect in the other groups (6). Their second study compared weight loss results for 30 overweight adults who drank either chlorogenic acid-enriched or normal coffee. Those who drank the former lost an average of 11.9 pounds, while those who drank the latter only lost 3.7 (6). The researchers thus concluded that chlorogenic acid has “a significant effect on the absorption and utilization of glucose from the diet,” one that can reduce body mass over time (6).

Other Health Benefits
Though green coffee bean’s rise to fame was driven by its weight-loss potential, that isn’t its only use. A recent crossover study found chlorogenic acid, specifically from green coffee bean extract, reduced systolic and diastolic blood pressure in 20 adults over five weeks (7). It also significantly reduced their cortisol/cortisone ratios. This suggested an inhibition of 11bHSD1 activity, an increase of which is associated with higher risk of cardiovascular disease and obesity (7). In addition, green coffee bean’s positive effect on blood sugar levels and inhibition of glucose absorption may play a role in diabetes support (8).

Green coffee bean may also contribute to mental health. In a double-blind, crossover study, 39 participants drank the equivalent of three cups of either caffeinated coffee, decaffeinated coffee, decaffeinated coffee enhanced with chlorogenic acid or placebo. Though regular decaffeinated coffee showed no positive effect on mood, both the caffeinated and decaffeinated coffees enhanced with chlorogenic acid improved the participants’ moods and attention processes (9). Thus, chlorogenic acid may have positive behavioral effects, warranting further investigation.

Mouthwatering Shrimp Skewers with Sweet Pineapple


  • 16 medium shelled shrimp
  • 4 soaked wooden skewers
  • one cup pineapple, cubed
  • 1 tablespoon each of olive oil, lime juice, minced cilantro

  • 1 tablespoon flaxseed oil


  • Set oven to broil.
  • Poke skewers through shrimp and pineapple.

Alfredo Sauce


  • 1/2 cup cashew cream or thick cashew milk
  • 1 tsp. lemon juice
  • 1 tsp. miso
  • 1 clove garlic
  • 1/4 small onion

  • 2 tbsp. nutritional yeast


  • Make a thick (less watery) batch of cashew milk for this recipe.

Spicy Mango Ginger Soup


  • 1 large mango, peeled
  • 1/2 onion, chopped
  • 1/2 cup cold water
  • 1-2 small chili peppers, minced (or to taste)
  • Extracted juice from a lime
  • 1/2 tsp. grated or minced ginger


  • Process all ingredients together in a blender until smooth and creamy, adding a bit more or less water as needed. Chill before serving.

Crab Cakes


  • 500 grams fresh crab meat
  • 1 small shallot, minced
  • 2 scallions, minced
  • 1 tbs fresh cilantro, minced
  • 2 tbs freshly ground flaxseed meal
  • 2 Omega-3 eggs
  • 2 tbs olive oil
  • 4 lemon wedges
  • Pepper


  • Combine crab meat in a food processor with shallot, scallions, and minced cilantro and process until smooth.
  • Place crab mixture in a bowl and combine thoroughly with flaxseed meal and eggs. Shape into four patties.
  • Heat oil in a skillet over medium flame.
  • Cook patties for five minutes, turning them once.
  • Garnish with lemon wedges and cilantro sprigs. Sprinkle with pepper.

Holiday Sweets with Yacon Syrup

No matter what holiday you celebrate, they all always call for good food and good company. However, once you get to the dessert you are typically full, but have a hard time passing it up! According to, here are some fun and healthy recipes that traditionally call for molasses:

Gingerbread Cookies

  • 5 cups blanched almond flour
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ginger powder
  • ¼ teaspoon cloves, ground
  • ½ teaspoon celtic salt
  • 1 teaspoon baking soda
  • ½ cup grapeseed oil or palm shortening
  • ½ cup agave nectar or honey
  • 1 tablespoon vanilla extract
  • ½ cup yacon syrup
  • 2 eggs
  • 1 teaspoon lemon zest
  1. In a large bowl, combine almond flour, cinnamon, ginger powder, cloves, salt and baking soda
  2. In a smaller bowl, mix together grapeseed oil, agave, vanilla, yacon, eggs and lemon zest
  3. Stir wet ingredients into dry
  4. Chill dough in freezer for 1-2 hours
  5. Roll out dough between two pieces of parchment paper to ½ inch thick
  6. To make dough even easier to handle sprinkle with almond flour
  7. Remove top sheet of parchment paper, cut out cookies using a medium gingerbread man cookie cutter
  8. Decorate with nuts and dried fruit –we used pieces of lemon rind for the mouth
  9. Transfer with a spatula to a parchment lined baking sheet
  10. Cook at 350° for 12-15 minutes
  11. Cool and serve

Fig Newtons

  • 1 cup dried figs
  • ½ cup lemon juice, freshly squeezed
  • 1 tablespoon vanilla extract


  • 2 ½ cups blanched almond flour
  • ½ teaspoon celtic sea salt
  • ½ cup agave nectar or honey
  • ¼ cup yacon syrup
  • ¼ cup grapeseed oil or palm shortening
  • 1 tablespoon vanilla extract
  1. Place figs in a food processor and blend for 30 seconds until they are well chopped
  2. Add lemon juice and vanilla; process until a smooth paste results
  3. In a large bowl, combine almond flour and salt
  4. In a smaller bowl, combine agave, yacon, grapeseed oil and vanilla
  5. Mix wet ingredients into dry, then refrigerate dough for 1 hour
  6. Divide chilled dough into 4 parts
  7. Between 2 pieces of parchment paper, roll out 1 part of the dough into a 10 x 4 inch rectangle, ¼ inch thick
  8. Spread ¼ of the filling evenly down the right side (lengthwise) of the rectangle
  9. Fold the dough in half down the long side –resulting in a 10 x 2 inch bar
  10. “Mend” the seam so the bar is symmetrical
  11. Repeat with 3 remaining parts of dough and filling
  12. Transfer each bar to a parchment paper lined baking sheet; bake at 350° for 10-15 minutes
  13. Allow to cool slightly; cut bar every 2 inches to form the fig newtons
  14. Serve

Chocolate Peanut Butter Tart

  • 1 ½ cups peanuts, roasted
  • ¼ teaspoon celtic sea salt
  • ¼ teaspoon baking soda
  • 2 tablespoons grapeseed oil or palm shortening
  • 2 tablespoons yacon syrup
  1. Grind the peanuts in a food processor to a fine meal (make a crunchy meal for a crunchier crust)
  2. Pulse in the salt and baking soda
  3. Pulse in the grapeseed oil and yacon syrup and continue pulsing until the dough is formed
  4. Remove dough from food processor and press into a 9-inch tart pan
  5. Bake at 350° for 8 minutes, until fragrant and golden brown
  6. Cool, then fill shell with chocolate pudding
  7. Serve
